Fosfolipidi su glavne strukturne komponente ćelijskih membrana. Suncokretov Lecithin sadrži fosfatidil holin, najzasupljeniji fosfolipid u spoljašnjem delućelijske membrane i odgovran je pravilno funkcionisanje ćelije.

Lecitin iz suncokreta takođe prirodno obiluje i drugim fosfolipidima (fosfatidil inozitol, fosfatidil etanolamin) i esencijalnim masnim kiselinama.

Lecitin se koristi kod poremećaja memorije, demencije, Parkinsonove i Alzheimerove bolesti i anksioznosti. Povoljno deluje na smanjenje količine holesterola, štiti holesterol od oksidativnih procesa, sprečava stvaranje žučnih i bubrežnih kamenaca te pomaže detoksifikacijske procese i zdravlje jetre. Lecitin pomaže u prenosu masti po telu i zajedno s holesterolom proizvodi žuč.
