Opis i korišćenje

Agar Agar je prirodni prah za želiranje koji se dobija od crvenih morskih algi pod nazivom Gelidium. Prah je bez ukusa i mirisa, a najčešće se koristi kao veganska alternativa želatinu. Zbog velike količine vlakana koristi se i kao laksativ. U odnosu na želatin Agar Agar ima mnogo veću moć želiranja i stabilniji je na sobnoj temperaturi u odnosu na želatin.

Način upotrebe: Koristi se 1% u odnosu na količinu vode (1g/100ml). Pre upotrebe prah razmutiti u malo vode (da nije vrela), zatim u odgovarajućoj količini vode kuvati pet do sedam minuta. Kod pripreme jela u kojima ćete koristiti agar-agar možete dodati i sve ostale sastojke osim dodavanja vode. Jedini uslov je da temperatura vode u kojoj je prah otopljen ne sme biti ispod 50 stepeni. Nakon što ste dodali sve sastojke u rastvor vode i agar agar praha - smesu ostavite da odstoji kako bi očvrsnula.

Agar agar se koristi za zgušnjavanje umaka, marmelada,krem supa, sladoleda, za pripremu namaza, krema i glazura.
